Hello lovelies, as moms we are generally rushing from here to there, whether you are a stay-at-home-mom or a working-outside-the-home-mom, let’s face it, we’re all working hard!
This can mean that we are grabbing quick snacks or eating leftovers and not really taking the few minutes to prepare ourselves something nourishing and delicious. It’s time to change how we treat lunch, and ourselves, and use it as a chance to nourish our body and our mood!
These are just a few quick ideas that I love, just to give you a taste, so to speak!
Roast chicken, pesto, stuffing and rocket wrap
If you’ve made roast chicken for dinner this is the perfect wrap to make use of leftovers, especially if you have some tasty crunchy stuffing to sprinkle over your chicken!
Lay out your wrap, spread with a little pesto and layer on some rocket leaves.
Slice your chicken and place on top. Squeeze a little mayo over the chicken if you want to add another level of flavour!
Next sprinkle with stuffing, fold and enjoy!
Roast chicken, pesto, rocket, sundried tomato and feta ciabatta
Here’s another great lunch using leftover chicken, coat ur ciabatta in pesto, add your rocket, chicken, sundried tomatoes and a generous crumbling of feta.
You can, of course, eat this as is but I love to use my waffle iron to make it all toasty and get that feta melting!!
Turkey Rashers, pesto, mixed leaves and feta sandwich
Toss some mixed salad leaves in a bowl with a dash of Extra Virgin Olive Oil, a dash of balsamic vinegar and a pinch of salt and pepper. Set aside.
Fry 2 turkey rashers in a little low-cal cooking spray and as they cook assemble the bed of your sandwich.
You can use whatever bread is your preference here, sourdough, brown, ciabatta or plain old white bread.
Spread with some pesto and layer on your mixed leaves.
Next, crumble over some feta and a squeeze of mayo.
Layer your turkey rashers over the top and let the heat get to work on that feta!
So there you have it, three simple, quick and tasty recipes using simple ingredients. You can put either of the three into a wrap, ciabatta or sandwich and tailor it to your own tastes.
