We all know how demanding children can be when it comes to meal time and some times you need a quick recipe or two, and something with little fuss. Particularly during the summer holidays, we all just seem to be preparing food around the clock. So make sure you have a balance between some quick healthy meals and some more elaborate, creative dishes for the family. It all can be a bit draining otherwise, and ultimately you take away from your own time with your kids, loved ones or your ‘me’ time if you’re aiming for Michelin 3 star standards so give yourself a break as much as you can and choose a healthy but not so time consuming recipe for those days when you just need an extra min or two.
Try this basic, fuss-free meal option for your family
A Quick YUMMY MUMMY Quiche
What you need: 8 eggs,1/2 an onion,4 rashers,4 tomatoes, one fist of spinach, 2 fists of cheddar cheese,200ml double cream, store bought shortcrust pastry, salt & pepper
Method: Chop up the onion and fry it in some butter until it’s caramel coloured and soft. Remove from the pan and set aside.
Fry the rashers and leave to cool.
Preheat the oven to 200℃
Chop up rashers,spinach and tomatoes (remove seeds)
In a bowl whisk together the eggs and cream.
Add in onion,spinach,rashers,tomato and cheese. Stir to combine. Season with salt and pepper.
Line a greased baking tin with your pastry and pour in the filling.( I used a springform tin as I don’t have a fluted flan tin and it turned out perfect. )
Cook for 40 mins covered loosely with tinfoil and 10 mins uncovered to brown the top.
When you remove from the oven,leave the quiche stand for 10 mins to set before you remove it from the tin.
