Hello lovelies!
Everyone loves to come home to a home cooked dinner, ready to eat with minimal effort. To achieve this as a busy mom, I look to my handy slow cooker for help! I picked mine up at Aldi for around 20€. Argos and Amazon online stores also have very affordable options. We will be sure to mention top slow cookers and multi- cookers on the market in our upcoming post.
But for now let’s get down to what’s cooking, good looking?
To get started, I plug-in my slow cooker to heat it, set it to high. Next I brown a nice cut of beef, housekeeper’s cut or a round roast is usually what I get. When the meat is seared all over, place it in the slow cooker. Now comes this little wonder pot of flavour! OXO Rich Beef Stock Pot – in a slow cooker you reduce the amount of liquid you would normally use so I mix the stock pot with 250 ml of hot water and add it to the slow cooker. For an extra dash of yummy, I tip in a splash of red wine and replace the lid. It’s perfectly ok to add some root vegetables i.e. carrots/parsnips etc. at this point or else steam them later with your spuds!
Leave the beef cook for 6 hours on high, don’t remove the lid during cooking as it extends your cooking time, I promise your beef will be ok!
Now your free to go about your business go to work, do the school run or the shopping and come home to the welcoming smell of roast dinner. All you need is to prepare your side dishes or maybe you’re so super organized that you did that the night before or that morning!
After 6 hours turn off the slow cooker and remove your beef. Place it on a plate, cover it in tinfoil and allow it to sit for about 30 minutes before carving. Don’t discard those beautiful juices! Put 4 tablespoons of cornflour in a saucepan and gradually add in the meat juices, stirring constantly to avoid lumps. Heat gently while stirring and simmer for 5 mins.
Carve your mouth-watering beef and pile your plate high with your favourite veg and lashings of homemade gravy.
